    Introduction
    This slightly curled, long golden-brown leaves tea comes from Phoenix Mountain at Guangdong Province of China. In tea world, there are many types of tea available. Thus, it is not wise to name a tea as the best tea. Made of long, thin leaves crafted by artisans, then high-fired to a deep brown-red leaf color in wicker baskets over wood charcoal, the taste is toasty, full of aroma and fruity notes.  
     
    Dan Cong or Shui Xian is one of China’s most revered Oolongs: it is produced from a special, very old varietal of tea bush that grows only in the hills around Chao Zhou in Guangdong province. A well-brewed, high grade tea is regarded by many connoisseurs as the ultimate tea.
     
    Tasting notes
     
    Dan Cong is the Carmen Miranda of Teas: Bursting with intense flavours of sweet apricots, mango and peach, with rich floral notes of orchids and honeysuckle. The dried tea leaves are very aromatic even before they are steeped. Old bush varieties can show some astringency and need careful brewing to produce flavours of extreme complexity – including dried fruit, cinnamon, ginger, grapefruit and almonds. The infusion yields a beverage that is sweet with a peachy flavor reminiscent of a popular fruit in China called longan.

    Fenghuang, Chao Zhou, Guangdong province
    Varietal: single trunk, this is a tall, large-leaved tea, unique to the Chao Zhou area. There is some controversy about the name.
    variety: It is often translated as ‘single bush’. Some is still picked and sold from single bush, although it is often misrepresented. True single bush DanCong is very rare and expensive.
